Spicy Chipotle Chicken Burger

A & W Restaurant Copycat Recipe

Chicken Burger:
1 (8 oz.) boneless skinless chicken breast
1/2 teaspoon Lawry's Seasoned Salt
1/2 teaspoon pepper
2 large ciabatta rolls, halved
2 teaspoon unsalted butter, melted
4 slices bacon, cooked crisp
2 thick slices tomato
1 leaf iceberg lettuce, halved

Spicy Chipotle Sauce:
1 chipotle pepper, mashed or finely minced
1 teaspoon adobo sauce
1 1/2 teaspoons Old Bay Seasoning
1 1/2 teaspoons Dijon mustard
1 tablespoon fresh lemon juice
1/2 mayonnaise
1/4 teaspoon kosher salt
1/2 teaspoon pepper

To make the Spicy Chipotle Sauce: Whisk together the chipotle adobo sauce, Old Bay, mustard, lemon juice and mayonnaise. Stir in the salt and pepper. Refrigerate until ready to use.

To make the Sandwiches: Light your grill. Clean the grate and coat with vegetable oil. Split the chicken breast in half and pound the filets flat. Sprinkle both sides with the seasoned salt and pepper. Grill the chicken 6 to 7 minutes per side or until cooked completely done. Coat each half of the rolls with melted butter and lightly toast on the grill.

Spoon 1 to 2 tablespoons of the Spicy Chipotle Sauce over the bottom halves of the rolls and build the sandwiches by adding the chicken, bacon, lettuce and tomato. Spread more sauce on the top half of each roll.
