Grilled Honey Lime Shrimp


GRILLED HONEY LIME SHRIMP and Ginger Mayo
Bubba Gump Shrimp Company Recipe

Shrimp:
1/4 cup finely chopped green onions (about 4 onions)
1/4 cup vegetable oil
3 teaspoons lime peel
1 tablespoon fresh lime juice
1/3 cup honey
3 tablespoons chopped fresh parsley
1/2 teaspoon salt
1 pound shrimp Jumbo Shrimp, deveined, shelled with tails on (about 12/pound)

Ginger Mayonnaise:
1/4 cup mayonnaise
2 to 3 tablespoons freshly grated gingerroot
2 teaspoons chopped fresh parsley

In medium bowl, combine all ingredients for the shrimp, except the shrimp. Stir in Shrimp. Cover and chill for at least one hour in the refrigerator.

In small bowl, combine all mayonnaise ingredients. Cover and store in the refrigerator until ready to serve.

When ready to serve, heat grill. Drain shrimp and discard the marinade. Thread shrimp on metal or bamboo skewers. Grill 5 to 8 minutes or until the shrimp are opaque; turning once. Serve warm with the Ginger Mayonnaise.
