Trader Vic's Cheese Balls

Trader Vic's Copycat Recipe

Makes 30

1/2 pound cheddar cheese, shredded
6 ounces shrimp, uncooked, peeled, deveined and finely chopped
1 1/2 tablespoons fresh cilantro, chopped
1 tablespoon jalapeno chili peppers, canned, seed and chop
pinch chili powder
vegetable oil, for deep-frying
1 cup flour
1/2 cup cornstarch
3/4 teaspoon baking powder
pinch salt
1 cup water
2 tablespoons vegetable oil
panko bread crumbs

Mix cheese, shrimp, cilantro, chilies and chili powder in bowl. Roll into 3/4" balls.
Heat oil in deep fryer or heavy large saucepan to 350. Combine flour, cornstarch, baking powder and salt in large bowl. Make well in center. Add water and 2 tablespoons of oil to the well. Gradually whisk liquid into flour until smooth batter forms. Dip cheese balls into batter, allowing excess to drip back into bowl. Roll in panko bread crumbs, coating completely. Add to oil in batches and deep fry until golden brown. Drain on paper towels and serve immediately.
