Tommy Bahama Crab and Avocado Salad



Crab Meat, Shredded Romaine, Vine-Ripe Tomatoes and Feta Cheese in a Caper-Lime Vinaigrette


CRAB and AVOCADO SALAD
Tommy Bahama Copycat Recipe

Caper Lime Vinaigrette:

2 -3 limes, juice and zest of
2 tablespoons white wine vinegar
2 tablespoons capers, drained
2 garlic cloves
2 teaspoons coarse grain mustard
1 bunch fresh coriander leaves, chopped coarsely
4 tablespoons extra virgin olive oil
salt
fresh ground black pepper


Prepare dressing by mixing all ingredients together in bowl. Check taste. You can make it ahead of time and put in fridge overnight.
