Margaritaville Sweet Potato Chips

Margaritaville Copycat Recipe

Serves 4-6

2 medium sweet potatoes
2 to 4 quarts canola oil (as required by your fryer)

Seasoning Blend:
1 teaspoon salt
1 1/4 teaspoon granulated sugar
3/4 teaspoon ground black pepper
3/4 teaspoon paprika
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/8 teaspoon cayenne pepper
1/8 teaspoon ground coriander
pinch ground cinnamon

Combine ingredients for seasoning in a small bowl, Slice potatoes to 1/16-inch thick with a vegetable slicer or mandoline. Soak potato slices in cold water for 10 to 15 minutes, then pat slices dry on a towel.

Preheat canola oil in a deep fryer to 325 degrees. When oil is hot, fry potato slices in batches for 4 to 5 minutes or until chips become light brown. Occasionally stir slices gently while they fry. Be careful not to overcook, since the chips will continue to brown after you remove them from the oil. Remove chips to paper towels to cool and sprinkle with thr seasoning blend.
