Hard Rock Cafe Grilled Vegetable Sandwich



GRILLED VEGETABLE SANDWICH
Hard Rock Cafe Copycat Recipe

Makes 1 Sandwich

2 sourdough 8 inch long French Rolls
6 tablespoons mayonnaise
1/2 teaspoon chopped parsley
pinch dried oregano
salt
1 red bell pepper
1 small zucchini
1 small yellow summer squash
1/4 eggplant
6-8 onion ring slices
3-4 tomato slices
2 leaves red leaf lettuce
1 tablespoon freshly grated parmesan cheese
1/4 cup olive oil

Preheat barbecue or stovetop grill

To prepare spread, put 3 tablespoons of  mayo into a small bowl. Add parsley, oregano and pinch of salt. Set aside until ready to make sandwich

To make vegetables:  Cut pepper into quarters and brush both sides with olive oil. Cut zucchini, summer squash and eggplant into slices lengthwise not more than 1/4 inch thick. Brush with olive oil. Grill red pepper for 2 minutes and then squashes and eggplant about 3-4 minutes on grill.

To Serve:  Prepare rolls by slicing lengthwise. Add mayonnaise with herbs on bottom. Add zucchini, yellow squash, eggplant and then red peppers in that order. Sprinkle with parmesan cheese. Add onion rings and then tomato slices. Put lettuce leaves on top of peppers. Add mayo to top of roll. Cut roll diagonally and pierce each side with a toothpick before serving.
