Bubba Gump Stuffed Shrimp
This dish is called "I'm Stuffed" Shrimp at Bubba Gump Shrimp Company. It has large shrimp with crab stuffing baked in garlic butter. It is topped with Monterey Jack Cheese with Jasmine Rice in the middle.
Bubba Gump Copycat Recipe
1 cup of crab meat
15 extra large or jumbo shrimp, precooked
1/3 cup of bread crumbs
1 tablespoon of mayonnaise
1/4 cup of fresh parmesan cheese
1/4 cup chopped onions
salt and pepper to taste
1 tablespoon lemon juice
1 tablespoon of olive oil
Make the Stuffing: Saute chopped onions until tender. In a mixing bowl, combine crab meat, onions, bread crumbs, mayonnaise, Parmesan cheese, salt, pepper, olive oil and lemon juice.
Butterfly the shrimp and set flat side down in a baking pan or dish. Take approximately 1 to 1 1/2 tablespoons of crab mixture and roll into a ball about the size of a walnut. Place the crab "ball" on top of the shrimp. (You can add Monterey Jack cheese on top to make it more like the restaurant version). Place pan in 375 degree oven and bake for approximately 15-20 minutes.
Melt 1 tablespoon of butter or margarine in a saucepan. Add about 1/3 cup of white wine and simmer until reduced by half. Add about 1/4 cup of heavy cream and 1/2 teaspoon of Basil and simmer until slightly thickened.
