Black Bean Soup

Bahama Breeze Copycat Recipe

Serves 12

4 cans black beans
3 slices bacon, rough chopped
1 tablespoon olive oil
12 oz. Beer
3/4 cup onion, chopped
1/2 cup green pepper, chopped
2 tablespoons garlic, chopped
1/2 teaspoon cumin, ground
2 teaspoons Tabasco sauce
adobo sauce, salt  and pepper to taste

Heat oil in pot on medium heat. Add chopped bacon and saute for 1 minute. Add peppers, onions, and garlic and saute for 2 minutes. Add beer, Tabasco sauce, and cumin and bring to boil. Add 3 cans of beans with their juice and return to boil. Remove from heat and blend in food processor until smooth. Return to pot and add final can of drained beans. Season with adobo sauce, salt, and pepper to taste. Allow to simmer to reduce liquid. Serve in bowl with rice or enjoy as is.
