Bahama Breeze Island Onion Rings

Chili-Horseradish Sauce
1/3 cup mayonnaise
1/3 cup Heinz chili sauce
2 teaspoons prepared horseradish
2 teaspoons finely minced parsley
pinch salt

Citrus-Mustard Sauce
1/4 cup orange juice concentrate, thawed
1/4 cup Grey Poupon Dijon mustard
2 tablespoons honey
1 tablespoon granulated sugar
1/2 teaspoon finely minced garlic
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon coarse grind black pepper
pinch of salt

2 large sweet onions, sliced and separated into 16 1-inch-wide rings
2 cups flour
2 teaspoons salt
1 teaspoon paprika
1 teaspoon ground black pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
2 cups plain breadcrumbs
1 cup shredded coconut
3 eggs, beaten
3 cups milk

Vegetable oil for deep fryer

Chili-horseradish Sauce:
Combine all ingredients in a small bowl. Cover and refrigerate.

Citrus-mustard Sauce:
Combine all ingredients in a small bowl. Cover and refrigerate.

Combine flour, salt, paprika, black pepper, onion powder, and garlic powder in a large bowl. In a second large bowl, combine breadcrumbs and coconut. In a third, bowl, combine beaten eggs and milk.

Slice onion into wide rings and separate.

Dip onion ring into the egg mixture, then flour mixture. Being sure onion ring is well covered with flour. Dip onion ring back into egg mixture, back into flour mixture then back into egg mixture and finally dip onion rings into breadcrumb/coconut mixture.If desired, dip back into egg miture then the breadcrumb/coconut mixture a second time for a thicker coating. Let onion rings rest for about 20-30 minutes.

Preheat deep fryer and add oil according to manufacture's directions. Fry 3-4 onion rings at a time, about 1-2 minutes until golden brown.

Drain onion rings on paper towels after remving from deep fryer. Arrange onion rings into towers and serve with dipping sauces.
